Crispy Chicken Zucchini Patties

These crispy chicken zucchini patties are golden on the outside, juicy inside, and finished in the oven for the perfect texture. Serve them with a simple garlic yogurt sauce for an easy family dinner.

Ingredients
  

For the Patties

  • 500 g ground chicken
  • 250 g zucchini finely grated
  • 1 small onion
  • 8 tbsp breadcrumbs
  • 1 small egg
  • 1 tsp salt
  • 1 tsp chicken seasoning or to taste
  • 2 tbsp olive oil for frying

For Serving

  • garlic yogurt sauce optional
  • chopped fresh parsley

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Finely grate the zucchini and squeeze out as much liquid as possible.
  • Blend the onion until smooth.
  • In a large bowl, combine the ground chicken, blended onion, breadcrumbs, egg, salt, and chicken seasoning.
  • Add the grated zucchini and mix well until everything is evenly combined.
  • Wet your hands and shape the mixture into 8–10 patties.
  • Heat the olive oil in a large skillet over medium heat.
  • Fry the patties for 3–4 minutes per side, until golden brown.
  • Transfer the oven-safe skillet to the oven and bake for 20 minutes, or until the patties are cooked through. If your skillet isn't oven-safe, transfer the patties to a baking tray before baking.
  • Garnish with chopped parsley and serve warm with garlic yogurt sauce, if desired.

Notes

Squeeze the zucchini well to prevent the mixture from becoming too wet.
Wet hands make shaping the patties much easier.
Freshly grated zucchini keeps the patties extra juicy.
Cooking time may vary slightly depending on the thickness of the patties and your oven.
