Ingredients
  

  • For the Sandwich:
  • 6 slices of toasted bread
  • 200 g smoked salmon
  • 4 tbsp cream cheese
  • 1/2 cucumber thinly sliced
  • 2 tomatoes sliced
  • 4 lettuce leaves
  • For the Potato Wedges:
  • 2 medium potatoes cut into wedges
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika optional
  • For Serving:
  • Ketchup or dipping sauce of choice

Instructions
 

  • Prepare the Potato Wedges: Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
  • Toss the potato wedges with olive oil, salt, pepper, and paprika if using.
  • Arrange on the baking tray in a single layer and bake for 30-35 minutes, flipping halfway, until crispy and golden brown.
  • Assemble the Sandwich: Toast the bread slices until golden brown.
  • Spread cream cheese evenly on one side of each slice.
  • On the first slice, layer smoked salmon, cucumber slices, and a lettuce leaf.
  • Place the second slice of toast on top and add more cream cheese, tomato slices, and another layer of smoked salmon.
  • Top with the third slice of toast and gently press down.
  • Slice diagonally into triangles and secure with toothpicks if needed.
  • Serve: Arrange the sandwiches on a plate alongside crispy potato wedges.
  • Serve with ketchup or your favorite dipping sauce.

Notes

You can swap cream cheese for avocado spread or butter for a different flavor. To make it extra crispy, lightly butter the toast before assembling. For a healthier option, use whole grain or rye bread.
