Rustic Cherry Galettes with Cottage Cheese Dough

Soft and rustic cherry galettes made with cottage cheese dough. This easy no yeast recipe comes together in 30 minutes and is perfectly balanced — not too sweet.

Ingredients
  

For the Dough

  • 200 g cottage cheese
  • 1 egg
  • 100 –125 g flour adjust as needed
  • 1 tsp baking powder
  • pinch of salt

For the Filling

  • 200 g cherries frozen, thawed
  • 30 g cornstarch 2 tbsp
  • 1 tbsp sugar or sweetener

For Serving

  • fresh berries
  • powdered sugar
  • mint
  • yogurt or ice cream
  • honey optional

Instructions
 

Make the dough

  • Mash or blend cottage cheese if needed.
  • Mix with egg and salt.
  • Add flour and baking powder, mix into a soft dough.
  • Let rest for 10 minutes.

Cook the filling

  • Simmer cherries with sugar for 1–2 minutes.
  • Mix cornstarch with cherry juice, then add to cherries.
  • Cook, stirring, until thickened (about 30–40 seconds). Remove from heat.

Shape

  • Divide dough into 6 pieces.
  • Flatten into rounds on a lined tray.
  • Add filling and fold edges, leaving the center open.

Bake

  • Brush edges with egg yolk.
  • Bake at 200°C (400°F) for 20–25 minutes until golden.

Serve

  • Cool slightly, then top with berries.
  • Serve with yogurt, honey, or ice cream.

Notes

Use cottage cheese with around 5% fat for the best texture.
If the dough feels sticky, lightly dust with flour — don’t add too much.
Don’t overfill the galettes to prevent leaking during baking.
Frozen cherries work perfectly — just thaw and drain first.
Adjust sweetness to taste or use your preferred sweetener.
