Lemon Chicken Skewers Recipe

Ingredients
  

  • 500 grams chicken fillet cut into bite-sized cubes
  • 2 tablespoons oil olive or vegetable
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon paprika
  • 1 teaspoon dried basil or fresh, finely chopped
  • 3 cloves garlic minced
  • 1/2 tablespoon salt
  • 1 red onion cut into chunks

Instructions
 

  • Prepare the Marinade: In a large bowl, combine the lemon juice, lemon zest, oil, paprika, basil, minced garlic, and salt. Stir well to mix.
  • Marinate the Chicken: Add the cubed chicken to the bowl, tossing it until evenly coated. Cover and refrigerate for 30 minutes to 2 hours.
  • Preheat the Oven: Preheat your oven to 200°C (400°F). If using wooden skewers, soak them in water for 10 minutes to prevent burning.
  • Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, leaving out any onion chunks. Arrange them on a baking sheet lined with parchment paper.
  • Cook and Serve: Bake in the oven for 15-20 minutes, turning halfway through, until the chicken is golden and cooked through. Serve with a squeeze of lemon or fresh herbs.

Notes

For extra flavor, marinate the chicken for up to 2 hours. Fresh lemon zest is key for a better citrus flavor. You can chill the garlic dill yogurt sauce (if making) for 15-20 minutes to make it creamier. Experiment with adding vegetables like bell peppers or cherry tomatoes to the skewers for added flavor and color.
