Healthy High-Protein Cottage Cheese Dessert with Berries

Ingredients
  

  • 400 g cottage cheese 5–9%, block-style
  • 4 tbsp semolina
  • 2 tbsp sugar
  • 2 large eggs
  • 2 tbsp sour cream
  • 1 tsp vanilla extract or 1 packet vanilla sugar
  • Zest from ½ orange
  • 150 g frozen blackcurrants or other berries, coated in flour
  • Butter and flour for greasing the dish
  • For serving:
  • Fresh strawberries halved or sliced
  • Powdered sugar or no-sugar dusting alternative
  • Fresh mint optional

Instructions
 

  • Preheat oven to 180°C (350°F). Grease and lightly flour an 8×8 inch (20×20 cm) baking dish.
  • In a bowl, mix cottage cheese, eggs, sour cream, vanilla, sugar, and orange zest.
  • Stir in semolina.
  • Coat frozen berries lightly in flour, then gently fold into the batter.
  • Pour into prepared dish.
  • Bake for 35–45 minutes, depending on your dish size. Use convection at the end for golden top, if desired.
  • Let cool slightly. Serve with fresh strawberries, a dusting of sugar (or a healthier option), and mint.

Notes

Baking time may vary with dish size — larger or deeper dishes may take longer.
Use fresh berries if you like, but frozen ones add more moisture.
