- 400 g cottage cheese 5–9%, block-style
- 4 tbsp semolina
- 2 tbsp sugar
- 2 large eggs
- 2 tbsp sour cream
- 1 tsp vanilla extract or 1 packet vanilla sugar
- Zest from ½ orange
- 150 g frozen blackcurrants or other berries, coated in flour
- Butter and flour for greasing the dish
- For serving:
- Fresh strawberries halved or sliced
- Powdered sugar or no-sugar dusting alternative
- Fresh mint optional
Preheat oven to 180°C (350°F). Grease and lightly flour an 8×8 inch (20×20 cm) baking dish.
In a bowl, mix cottage cheese, eggs, sour cream, vanilla, sugar, and orange zest.
Stir in semolina.
Coat frozen berries lightly in flour, then gently fold into the batter.
Pour into prepared dish.
Bake for 35–45 minutes, depending on your dish size. Use convection at the end for golden top, if desired.
Let cool slightly. Serve with fresh strawberries, a dusting of sugar (or a healthier option), and mint.
Baking time may vary with dish size — larger or deeper dishes may take longer.
Use fresh berries if you like, but frozen ones add more moisture.
Healthier sugar alternatives for topping: erythritol, stevia dust, or coconut flour.
