Ingredients
  

  • 1 banana
  • 1 egg
  • 130 g Greek yogurt
  • 2 tbsp flour

Optional:

  • orange zest
  • vanilla

For serving:

  • maple syrup
  • strawberries
  • dark chocolate shavings
  • or any toppings you like

Instructions
 

  • In a bowl, mix 1 egg, 130 g Greek yogurt, and 2 tbsp flour until smooth.
  • Batter should be thick. Add a little more flour if needed.
  • Slice 1 banana into rounds.
  • Heat a little oil in a pan.
  • Place banana slices in the pan and spoon batter over each.
  • Cook under a lid on both sides until golden.
  • Transfer to paper towels.
  • Serve warm with toppings.

Notes

Batter should be thick, not runny
Use ripe banana for sweetness
Don’t use too much oil
Cook under a lid for soft texture
Best served fresh
