  • 2 zucchini cut into sticks
  • 1-2 tablespoons olive oil suitable for high temperatures
  • 1 teaspoon paprika
  • 1 teaspoon dried garlic
  • Salt to taste
  • 2 tablespoons breadcrumbs
  • For the Yogurt Parmesan Dip:
  • 3 tablespoons Greek yogurt or sour cream
  • 1 clove fresh garlic minced
  • 50 grams grated parmesan
  • Fresh basil leaves for garnish

  • Preheat the Oven – Set your oven to 200°C (about 400°F) and line a baking sheet with parchment paper.
  • Prepare the Zucchini – Slice the zucchini into sticks.
  • Coat the Zucchini – In a bowl, mix the olive oil, paprika, dried garlic, salt, and breadcrumbs. Toss the zucchini sticks until well coated.
  • Bake the Zucchini – Arrange on a baking sheet and bake for 15-20 minutes at 180°C (350°F) until golden brown.
  • Make the Dip – In a small bowl, combine Greek yogurt, minced garlic, and salt to taste.

Notes
For extra crispiness, turn on the broiler for the last 2 minutes of baking. If you want a spicier flavor, add chili flakes or cayenne pepper to the seasoning mix. These zucchini sticks are best served fresh but can be reheated in the oven for a crispy texture.
