Crispy Belgian Waffles

These Crispy Belgian Waffles are light and fluffy on the inside with a perfectly golden, crispy exterior. Made with simple ingredients and a touch of vanilla, they are perfect for breakfast or brunch. Serve with your favorite toppings like fresh berries, whipped cream, or chocolate for a delicious treat

Ingredients
  

  • For the Waffles:
  • 2 eggs separated
  • 5 tbsp sugar
  • 2 tbsp ghee or butter
  • 190 ml milk
  • 15 tbsp flour
  • 1 tsp vanilla sugar
  • Pinch of salt
  • ½ tsp baking soda neutralized with lemon juice
  • Optional Toppings – Serving Suggestions:
  • Topping 1:
  • ½ cup cottage cheese yogurt
  • ¼ cup cherry compote
  • Mixed berries
  • Topping 2:
  • ¼ cup condensed milk
  • 1 banana sliced
  • Kinder chocolate chopped

Instructions
 

  • Prepare the Batter: Separate egg yolks from whites. In a bowl, whisk yolks with sugar until smooth.
  • Mix Wet Ingredients: Add melted ghee, then gradually mix in the milk while stirring.
  • Incorporate Dry Ingredients: Add flour, vanilla sugar, and mix until fully combined.
  • Whip Egg Whites: In a separate bowl, beat egg whites with salt and lemon juice until stiff peaks form.
  • Combine & Rest: Gently fold the whipped egg whites into the batter. Add baking soda and mix carefully. Let the batter rest for 7 minutes.
  • Cook the Waffles: Preheat and lightly grease the waffle iron. Pour batter in and cook until golden and crispy.
  • Serve: Enjoy plain or with your favorite toppings!

Notes

Beating the egg whites separately makes the waffles extra fluffy inside and crispy outside.
Letting the batter rest helps develop better texture.
Serve with your favorite toppings—try cottage cheese yogurt with cherry compote and berries, or condensed milk with bananas and Kinder chocolate for a decadent treat!
