Cottage Cheese Fritters with Herbs (Gluten-Free)

These gluten-free cottage cheese fritters are crispy outside, soft and cheesy inside, and made with rice flour, fresh herbs, and cheese. A high-protein breakfast or savory snack that's light, satisfying, and delicious with a simple Greek yogurt and lemon dip.

Ingredients
  

  • 100 ml milk
  • 2 eggs
  • 60 g rice flour
  • 130 g grated cheese
  • 100 g cottage cheese
  • salt to taste
  • 1 small garlic clove grated
  • chopped fresh dill
  • chopped green onions
  • olive oil or vegetable oil for frying

For Serving

  • Greek yogurt
  • lemon juice

Instructions
 

  • Whisk together 100 ml milk, 2 eggs, and salt.
  • Add 100 g cottage cheese and mix until smooth.
  • Stir in 60 g rice flour, 130 g grated cheese, dill, green onions, and grated garlic.
  • Heat a little oil in a non-stick frying pan over low heat.
  • Spoon 2–3 tablespoons of batter into the pan for each fritter.
  • Cover with a lid and cook until golden.
  • Flip and cook the other side until cooked through.
  • Transfer to paper towels to absorb excess oil.
  • Serve warm with Greek yogurt mixed with a squeeze of lemon juice.

Notes

Gouda works especially well, but any mild cheese will work.
Cook over low heat so the fritters cook through evenly.
Don't make the fritters too thick.
Let them rest on paper towels before serving.
Best served warm with the Greek yogurt and lemon dip.
