Chocolate Brownies with Cream Cheese and Cherries

Ingredients
  

Chocolate Brownie Base

  • 100 g dark chocolate 70%
  • 125 g butter
  • 110 g sugar
  • 2 eggs
  • 100 g flour

Cream Cheese Layer

  • 250 g cream cheese like Philadelphia
  • 50 g sour cream 15%
  • 50 g cream 20%
  • 1 tbsp cornstarch
  • 80 g frozen cherries

Instructions
 

  • Melt the dark chocolate with butter in a heavy-bottomed saucepan until smooth and glossy.
  • In a bowl, beat eggs with sugar until light and fluffy. Gradually mix in the melted chocolate and butter.
  • Sift in flour and fold gently until you get a smooth, pourable batter.
  • In a separate bowl, mix cream cheese, sour cream, cream, sugar, and cornstarch until smooth.
  • Lightly wet parchment paper and spread half of the chocolate batter in the pan. Add cherries (lightly coated in cornstarch), then spread the cream cheese mixture on top. Finish with the remaining chocolate batter.
  • Bake at 160°C (convection) for around 50 minutes, placing the pan in the middle of the oven.
  • Let cool at room temperature for 2 hours, then cover and chill in the fridge for at least 6 hours before slicing.

Notes

Use good quality chocolate for a richer flavor.
 Gently fold the flour to keep the brownies soft and fudgy.
 Chilling ensures clean slices and a creamy texture.
 Frozen cherries do not need full defrosting, just pat dry and coat lightly in cornstarch.
