Baked Salmon with Potatoes and Broccoli in Creamy Sauce

Ingredients
  

For the Creamy Vegetable Base

  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 20 g 1 ½ tbsp butter
  • 0.5 tbsp plain flour
  • 300 ml 1 ¼ cups 20% cream
  • 1 tsp lemon zest
  • 100 –150 g 1–1 ½ cups broccoli florets, chopped
  • Salt and black pepper to taste
  • Oil for frying

For the Salmon

  • 500 –600 g 1.1–1.3 lbs salmon fillet, skinless and boneless
  • Juice of ½ lemon
  • Salt and black pepper to taste

For the Potato Layer

  • 5 –7 medium potatoes
  • 1 –2 tbsp Greek yogurt or softened butter
  • 1 tsp potato seasoning paprika, garlic powder, etc.
  • 2 tbsp grated Parmesan or Biraghi cheese
  • Fresh parsley finely chopped

Instructions
 

  • Boil Potatoes
    Boil the potatoes (whole, skin-on or peeled) until just tender but still firm. Drain and let cool slightly. Peel if needed and slice into rounds.
  • Prep the Salmon
    Cut salmon into cubes. Season with salt, pepper, and lemon juice. Set aside.
  • Make the Sauce
    In a frying pan, sauté onion in a little oil until soft. Add butter, then stir in flour and cook for a minute. Add garlic, cream, lemon zest, chopped broccoli, salt, and pepper. Simmer for 2–3 minutes until thickened.
  • Assemble the Bake
    Pour the creamy vegetable sauce into a baking dish. Spread cubed salmon over the top. Layer the sliced potatoes over the salmon.
  • Top and Bake
    Spread Greek yogurt or butter over the potatoes. Sprinkle with potato seasoning. Bake at 180°C (350°F) for 30 minutes, until golden and bubbling.
  • Finish and Serve
    Sprinkle with chopped parsley and grated cheese. Serve warm and enjoy!

Notes

Greek yogurt adds a tangy, lighter finish to the potato topping. Butter gives a richer, more classic flavor—choose what you prefer!
You can use other firm white fish like cod or trout as a substitute for salmon.
For extra flavor, sprinkle a few capers or olives into the creamy base.
