Baked Potato Croquettes with Cheese and Green Onion

These baked potato croquettes with cheese and green onion are a crispy, flavorful snack made with mashed potatoes, melty cheese, and aromatic spices. Oven-baked for a lighter twist, they’re perfect for a quick appetizer or side dish.

Ingredients
  

  • 500 g potatoes about 1 lb
  • 2 green onion stalks finely chopped
  • 1 garlic clove finely minced
  • 100 g hard cheese cubed (cheddar or similar)
  • 1 egg
  • 70 g breadcrumbs about 2/3 cup
  • 2 tsp smoked paprika
  • Salt and pepper to taste
  • 4 tbsp all-purpose flour for coating
  • Olive oil spray for baking

Instructions
 

  • Wash potatoes and boil them in their skins until fork-tender. Let cool slightly and peel.
  • Mash the potatoes with a masher. Add chopped green onion, garlic, salt, and pepper. Mix well.
  • In a separate bowl, combine breadcrumbs with smoked paprika.
  • Cut the cheese into small cubes.
  • Take about 1 tablespoon of the potato mixture, place a cube of cheese in the center, and form a ball around it.
  • Roll each ball in flour, then dip into beaten egg, and coat with paprika breadcrumbs.
  • Place croquettes on a parchment-lined baking tray and lightly spray with olive oil.
  • Bake in a preheated oven at 200°C (390°F) for 15 minutes, or until golden and crisp.

Notes

You can prepare the croquettes ahead and store them in the fridge before baking.
Serve warm for the best cheesy center.
