Ingredients
  

For the Apricot Layer

  • 5 ripe apricots cut into large pieces
  • 1 tbsp cornstarch
  • 4 g vanilla sugar

For the Cottage Cheese Filling

  • 200 g cottage cheese
  • 150 g Greek yogurt
  • 1 egg
  • 1 tsp sugar optional

For the Crumble Topping

  • 40 g oats
  • 40 g all-purpose flour
  • 40 g cold butter
  • 20 g brown sugar
  • 25 g walnuts chopped
  • pinch of salt

For Serving

  • Greek yogurt
  • maple syrup
  • honey
  • fresh mint

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Toss the apricots with the cornstarch and vanilla sugar.
  • Transfer to a lightly greased small baking dish.
  • Mix the cottage cheese, Greek yogurt, egg, and sugar until smooth.
  • Spread the filling over the apricots.
  • In a separate bowl, combine the oats, flour, brown sugar, walnuts, and salt.
  • Rub in the cold butter until crumbly.
  • Sprinkle the crumble evenly over the filling.
  • Bake for 30–35 minutes until golden.
  • Let cool slightly before serving.

Notes

If your cottage cheese is grainy, blend it first.
Use ripe apricots for the best flavor.
Sugar in the filling is optional if the fruit is sweet.
Keep the butter cold for a crisp crumble topping.
