How to Make Garlic Parmesan Smashed Broccoli

1. Cook the Broccoli

Cut the broccoli into medium-sized florets, keeping enough of the stem attached so the pieces hold together.

Bring a large pot of salted water to a boil. Add the broccoli and cook until tender enough to smash. The florets are ready when a knife slides easily through the thickest part of the stem.

Drain immediately and rinse the broccoli under cold water. This stops the cooking process and helps preserve its bright green color.

Let the broccoli drain very well before assembling. Excess water can prevent the Parmesan from becoming crisp.

2. Prepare the Baking Sheet

Preheat the oven to 210°C (410°F).

Line a large baking sheet with parchment paper.

For each broccoli floret, drizzle about ½ tablespoon olive oil onto the parchment in a small circle. Sprinkle a thin layer of finely grated Parmesan over the oil, followed by a little dried garlic and your favorite seasonings.

3. Smash the Broccoli

Then switch to the upper grill/broiler and cook for another 5–7 minutes, watching closely, until the Parmesan is deeply golden around the edges and the broccoli has lightly browned.

Broilers vary considerably, so keep an eye on the broccoli during the last few minutes.

5. Let the Parmesan Set

Remove the baking sheet from the oven and leave the broccoli on the tray for 5–7 minutes.

This step is important. The Parmesan may still be soft immediately after baking, but as it cools slightly, it firms into a thin, crispy crust.

Slide a thin spatula underneath each piece and carefully lift it from the parchment, keeping as much of that golden Parmesan crust attached as possible.
